Jiaozi (Dumpling) Feast:

Jiaozi (Dumpling) Feast is a kind of newly created well-known feast of local flavor on the basis of the traditional dumpling recipe. Jiaozi feast is made of the selected fine ingredients, inviting and unconventional in appearance with a great variety of fillings, which tastes delicately sweet and rich in nutrition. It is indeed a mixed combination of good-looking, good smelling and delicate good taste. Now Jiaozi feast has 180 varieties. There are several dozens of feasts, such as " Court Dumpling Feast", "Eight Immortals Crossing the Sea", "Dragon and Phoenix Feast" each of which has its own shape and a hundred dumplings have a hundred different tastes.

Baked Bun Soaked in Mutton Soup:


Baked Bun Soaked in Mutton Soup  is the most famous folk foodstuff of Xian. There is a particular way of eating the Baked Bun Soaked in Mutton Soup.When the customers are served, the restaurateur will first offer the kind of hard dried pancake and the customers will break the pancake into small pieces, then give it back to the restaurateur for cooking the shredded pancake with mutton in delicious soup. The finished dish is steaming hot with an unusually sweet smell.

Lao Tong's Cured Mutton:
Cured mutton is a well-known snack in Xian City. The cured mutton is prepared with selected meat stuff, the cooking artistic means and the subsidiary seasoning materials, and so, the cured mutton is ready. The mutton stewed in soy sauce looks bright and lustrous, tastes crisp and delicious. It is the right thing to go with wine and also an excellent specialty to give relatives and friends as gift.

 

The Chang'an Gourd Chicken:
The Gourd Chicken is one of Xian's traditional local flavor, the characteristics of which lie in its golden rich color, crisp skin, tender meat, good smell and soft and thorough cooking. Just give it a little touch with chopsticks and the meat is separated from the bones. It is rich in protein and with saturated fatty acid necessary for the human body.

 Xian Huis(Muslim) Foodstuff Street is situated at the north of Middle Section of West Street at Da Mai Market Street. It is a place of the Huis (Muslim) exquisite food and drink with a long history, a great variety of foodstuff of various descriptions and strong national flavor in the ancient Xian city.

 

hulutou

 

Hulutou(intestines in Broth) is a local delicacy in Xi'an.Its raw materials are intestines.Before it is served ,the customer needs to break the pancakes into small pieces,then the chef soaks them in the boiling bone soup three or four times with pork intestines,chicken,sea cucumber and and squid on the top.Afterward, lard,and greens are added to it.It is often served with preserved garlic and chili jam.

It is said that this culinary method was passed down from Sun Simiao,the famous doctor in the Tang Dynasty,to an owner of a restaurant in Chang'an with a bottle gourd of medicine for the flavoring. After the owner of the restaurant improved the delicacy in light with what Sun Simiao told him,the delicacy became known as intestines in broth for thousands of years.

 

The Buckwheat Noodles 

The Buckwheat noodles are made by pressing the buckwheat flour doughs through a special device with holes.They can be served either hot or cold. If it is served cold,flovor it with salt,vinegar,mustard,garlic sauce and hot chili.If it is served hot soup and scoop it up and top with cooked vegetables and sauces.

Buckwheat noodles taste a little bitter but delicious and theeey are beneficial all the year round for its antipyretic nature.

 

Zeng Gao 

Zeng Gao(steamed rice pastry) is a traditional snack for breakfast in Central Shaaanxi.It is made from glutinous rice and dates in a steamer which is developed from an ancient cooking vessel Zeng,hence the name Zeng Gao.Dates have a lot of medicinal functions such as enriching the blood and calming the nerves and Zeng Gao has a strong flovor of dates and is soft,sticky and tasty.

 

 

The Noodles with Sauces

The Qishan noodles have a long history and became well known as early as the Qing Dynasty.The noodles must be hand-made of good wheat four .The sauses include pork shreds,citron daylily,egg,wood fungus,and bean curd which are flavored with a variety of spices,Before they are seerved,the noodles are first scooped and then mixed with ingredients.

The Qishan noodles originated in Qishan County,hence the name.When they are served, there is more soup,which taasts sour and hot,than noodles in the bowl.

 

Guo Kui

Guo Kui(pancake),a well-known snack in Qian xain County,is thick in the middle and thin on the verge with designs of the wheel on the surface.It is crisp and tasty and is always a good present for friends and relatives.In the prosess of making it,the wheat flour is mixed with a limited amount of water to make a paste and then baked over soft fire so that it is easy to store and handy to carry because it contains almost no moisture.That is why it is often the custom of the local people of Shaanxi to travel with it as their food.Cuo Kui is one of "the Ten peculiarities" in Central Shaanxi and it is often described as big as a manhole cover.
